Biological source CLOVE IS THE DRIED FLOWER BUD OF EUGENIA CARYOPHYLLUS BELOGING TO FAMILY myrtaceae.

Geogrphical sources : Islands of Penaga, pemba, zanzibar, sumarta, maurities.Also found in Brazil, seychelles and west indies.

Constituents:

  1. volatile oil
  2. gallotannic acid
  3. oleanolic acid
  4. vanillin
  5. eugenin
  6. methylamyl ketone

Eugenol is the chief phenolic substance present in the volatile oil

Uses:

Cloves are used as carminative and flavouring agent, as a spice and for the production of clove oil.

clove oil is used as a flavouring agen and antiseptic. It is commonly employed as a remedy for toothache when applied locally to dental cavities. Eugenol present in the oil acts as a local anaesthetic.

ADULTERATION :

adulteration is done with cloves from which the clove oil is removed either entirely or partially.

How to test adulteration?

Place cloves in fresh boiled and cooled water, the genunine cloves will sink in water.

According to analysis cloves contain volatile oil 18%, almost tasteless resin 6%, tannin 13%, difficulty soluble extractive with tannin 4%, gum 13%, woody fibre 28, and water 18%. The volatile is obtained from cloves by repeated distillation. Cloves stalk although inferior contain some of the active properties of cloves and they are extracted for some of inferior variety of essential oils. In the adulteration process the stalks are ground up and are mixed with the genuine powder of cloves. The quality and value of cloves are unfrequently impaired, like some other spices by the extraction of essential oil. To give the original appearance to the exhausted cloves, they are rubbed on their surface with common oil. Some dealers also sprinkle some water as the cloves imbibe water, which is another form of adulteration. Adulteration of powdered cloves can be easily detected under the microscope. If the essential oil is extracted there will be no appearing of the oil when it is pressed with the nail.
